creamy avocado pasta


what you'll need for sauce of 1 lb. of pasta:
10 - 12 small tomatoes, quartered
3 - 4 tbsp olive oil
2 ripe avocados, seed and skin removed
2 garlic cloves, peeled
1/2 of a lime
vegan parmesan cheese
vegan butter
sea salt and cracked black pepper

1. melt a spoonful of vegan butter into a small skillet and add the tomatoes.
2. let the tomatoes sit on low heat for about 10 minutes.
3. while your choice of pasta is boiling add olive oil, avocados, garlic, and juice from the lime to a blender or food processor. pulse/blend until the ingredients are smooth and creamy. add sea salt and cracked black pepper to taste.
4. strain you choice of pasta and in a large bowl combine with the avocado sauce, and tomatoes. sprinkle with vegan parmesan cheese.
