quinoa, kale, sundried tomato patties

what you'll need for 10 medium patties:
1 cup rinsed & washed quinoa
1 cup sundried tomatoes
1 bundle of kale
1 cup vegan parmesan cheese
1 cup gluten free breadcrumbs
1 medium sized sweet red onion, diced
1 cup of vegetable stock sea salt & crushed black pepper
EVOO

for garnish:
1 small avocado
juice of half of a lime
seasoning (i used perfect pinch fiesta citrus by mccormick)


1. add vegetable stock to 1 cup of water and bring to boil. add quinoa and let simmer until quinoa has absorbed most of the liquid (about 20 minutes)
2. wash kale and pull off of hard stem, steam for about 15-20 minutes
3. in a large skillet cook onions until golden. add sundried tomatoes and cook for a few minutes more
4. in a large mixing bowl add quinoa, onions, sundried tomatoes, kale, parmesan cheese, breadcrumbs, sea salt & crushed black pepper
5. refrigerate for about 20 minutes or until mixture cools off and absorbs each others liquid
6. pull mixture out of fridge and form into patties (compact tightly otherwise they fall apart when you cook them)
7. reuse the large skillet and put a little bit of EVOO before you put in patties. don't overcrowd the skillet otherwise they are harder to flip & keep together. cook 7-10 minutes on each side
8. cut avocado into thin slices, add some lime juice & seasoning and garnish!
